Venus Fruits: Winter Citrus + Spice Salad

Winter Citrus Salad: Use orange, blood orange, clementines or any citrus you want and can get. If you cannot find pomegranate anymore try two different citrus fruits or do frozen or just skip it.

Ingredients:

2 baby clementines peeled and sliced in half

2 Tbsp Pomegranate seeds

1 tbsp Extra Virgin Olive Oil

1/4 tsp of sea salt

1 Tbsp Lemon Juice + 1/4 tsp of the lemon zest

1/8th tsp ground cayenne pepper

Drizzle of raw honey/ 1/2 tsp or maple syrup

2 tbsp chopped pistachios quick toasted in a pan

Directions: In a bowl combine all the ingredients except the pistachios. Toss the salad with a spoon and let it rest. In a medium fry pan with no oil heat on medium/high. Let it heat for 1 min and then add the chopped pistachios to the pan. let them heat for 20 seconds and then mix around so you get them heated on all sides. Use a wooden spoon to move them around. Do not cook for more than 1 min. When they look a little golden on the edges they are done for sure. Remove them from the heat and add half to the salad and stir it around. Transfer the salad to a plate if you desire and then top of the salad with the remaining toasted pistachios. Drizzle more olive if you like. Eat it up and slurp up the citrus-cayenne olive oil at the end with some good bread.
