Grounding Carrot Soup


Ingredients

1 can coconut milk

3 carrots peeled and chopped

1 onion 

3 cloves of garlic 

1 tsp fresh ginger ( finely chopped or smashed)

1 1/2 tsp sea salt + 1/2 tsp Black pepper

1 tsp turmeric powder

1/2 tsp ground cumin

1 tsp ground coriander 

2 tbsp coconut oil 

5 cups of water

1 tsp of fresh lime or lemon juice ( optional)

1/2 cup red lentils 

Cilantro for garnish (optional)


Directions: Chop all your veggies and set aside. In large soup pot, heat on medium. Add onion and garlic and cook for 3 mins. Make space in center of the pot and add turmeric, cumin and coriander. Let the spices heat for 1 min to release their essence. Next add chopped carrots and stir, cook to sweat the carrots for 5 mins. Next add coconut milk, 1/2 cup red lentils, salt + black pepper plus 5 cups of water. Stir and raise heat to just below high. When soup comes to a boil  lower heat to low/simmer and cook for 1 hour. Make sure to cover your soup with a suitable lid that has a little space to let the soup breathe. Stir every 10/15 mins. Add more liquid if you want it do be very soupy.  When carrots are tender and lentils are fully cooked,  turn heat off and let it cool. Before serving add optional acid ( lemon or lime juice) mix well, taste to make sure its balanced in flavor and serve with extra ground black pepper and cilantro if you want for garnish. Transfer to a blender and purée if you want this soup to be smooth and easy on the belly. Enjoy!
