Gluten Free Banana Walnut Bread



Ingredients:

1 cup oat flour 

1 cup almond flour

1/4 cup chia seeds

1 tsp sea salt

1/4 tsp cinnamon 

1 tsp baking soda 

1 tsp baking powder

2 ripe bananas smashed

1/2 cup maple syrup 

1 tsp vanilla extract 

1/2 cup grape seed oil

1/3 cup vegan sour cream 

1 cup walnuts chopped

Coarse sea salt for topping



Pre-Heat oven 350 Degrees

Bake time: 50 mins (rotate baking loaf at 25 mins)

2 Bowls ( one medium one large)

Whisk or mixer

Spatula

Baking loaf pan or cake pan


Directions:

1.) peel and smash 2 ripe bananas with fork until it’s mush in small bowl

2.) Mix Dry Ingredients: In large bowl mix with whisk flours, salt, baking powder/baking soda, cinnamon, and chia seeds

3.) In separate large bowl whisk Grape-seed oil and maple syrup well. Next whisk ingredients by order: mashed banana, vanilla extract, and sour cream. Whisk well until it is all immersed and smooth. Next slowly add in dry ingredients and whisk together in increments until batter is smooth (ok

If some lumps). Fold in with flat spatula 1 cup walnuts.

4.) Transfer batter to loaf pan or cake pan. Sprinkle top with a little coarse sea salt. Bake for 50 mins. Make sure to rotate pan at mid-bake time (25 mins) using hand protection carefully give the pan a 180 degrees rotation for even baking time for all sides. 

Let cool before cutting open/slicing. Enjoy for up to 1 week wrapped and kept in fridge.
