Gluten Free pasta with Celery Root Cream Sauce


Ingredients:

-1 celery root peeled and chopped

-3 cloves of garlic

-1 onion

-1 tbsp thyme

-1/2 tsp red pepper flake

-1 tsp of sea salt

-1/4 tsp black pepper

-3 tbsp olive oil

-2 cups water

-1/4 cup white wine (Note: I used a delish biodynamic orange wine and paired it with dinner and the flavors really worked well together. I would avoid pinot grigio and rieslings for this dish if you are able to. If you do not have wine, try vegetable broth as a replacement.

-3 tbsp Nutritional yeast


Added to blender to make final sauce:

-3 tbsp of nutritional yeast

-squeeze 1/4 of lemon

-3/4 cup of pasta water

-Soaked + drained cashews

Prep:
-Soak 1 cup of raw cashews or walnuts in water for 1 hr. 


Directions:

-Chop: Garlic, onion and celery root.

-In soup pot heat oil and sauté garlic and onion, and thyme all together. once onions are becoming translucent add chopped celery root and stir. Add salt and black pepper. let cook on medium for 5 mins. Add water and raise heat. Bring to a boil. Once boiling add in white wine and lower to simmer for for 30-40 mins until celery root is tender and liquid is reduced. Cover the pot with lid for last 10 mins of cooking. 


-Half-way thru cooking the celery root bring water for pasta to a boil. make sure to add 1 tsp of sea salt to the pasta water. cook pasta aldente, Before draining use a ladle to get 2/3 cup of liquid in measuring cup to set aside for sauce. 


-Add the whole celery root-liquid mix to the blender along with cashews, lemon juice, nutritional yeast and the pasta water. Blend until fully smooth and creamy. Taste and adjust salt and add more liquid if you need to ( olive oil or hot water). Toss pasta in sauce and add fresh parsley on top, roasted chickpeas, sautéed beyond meat sausage, sautéed greens or arugula.


Note: You could do this as a soup too- just add more water to the pot (3 cups) and then blend it all together with the cashews for a creamy soup. May need to add a little more salt and pepper but it should still be delish. You can also use this say base recipe for pasta sauces and swap veggies- try two cups of mushrooms or 2 cups of cauliflower chopped.
