Strawberry Dreamz Chia Pudding


Strawberry Chia Oat Pudding

1 cup of raw cashews soaked for 2 hours

1 cup of rolled oats

2 1/2 cups of water 

1/4 tsp sea salt 

1 cup of fresh or frozen strawberries (if frozen let then soften/defrost until tender and you can fork them)

3 tbsp maple syrup 

1/2 cup chia seeds 

Extra option: 1 tbsp coconut butter 

Strawberry cashew and oat milk with chia seeds




Tools:

Blender or food processor 

Whisk

Bowl or glass container like Pyrex ( 32 oz or larger-big enough to hold about 4 cups).







Directions:

  1. Soak cashews for 2 hours. Drain and add to high speed blender or food processor. Add rolled oats, 1/4 tsp sea salt, strawberries, maple syrup and 2 1/2 cups of filtered water. Note: if using food processor-blend cashews, oats and liquid first then add strawberries.

  2. Transfer the liquid blend to a large glass or Pyrex bowl or container. Add chia seeds to the liquid and whisk together for 1 min. The mix should start to thicken a little. This is the magic of chia ;) After 1 min of whisking let it rest. Cover with container lid or a sealing wrap (plastic wrap, sealing wax etc). Put in fridge and let chill for 1 hour.

  3. After 1 hour remove the bowl and whisk for 30 seconds again. Recover and put back in fridge for 1 hour more.

  4. After fridge time, enjoy!
